And, this is one of the dishes I’m making tonight. I’ve become quite the domestic New Yorker over the past few weeks - I cook all the time! :)
I used to be the queen of Seamless Web ordering something delicious every single night. Well, that was an expensive and fairly unhealthy habit I had to cut out of my life immediately after losing my job. I’m not quite a DIY queen, but definitely one in training.
Thanks Sarah for the amazing recipe!
mascarah:

Quick & Healthy Snack: Lemony Mushrooms
Ingredients:
 1 pound of white mushrooms
 5 tablespoons of olive oil
 2-3 cloves of garlic
 juice of half of lemon
 sea salt and pepper
 4 tablespoons of parsley
 lemon wedges
 crusty bread (to serve with)
Preparation: Wash the mushrooms, trim bottoms down and then cut into fourths. Heat olive oil in large pan, add garlic and let sit for a minute… then add mushrooms. Saute over a medium high heat until brown. Reduce to low heat for 5 minutes, stirring frequently. Add a squeeze of lemon juice, season w/ sea salt and pepper (to taste).Top with parsley saute for another minute.
Serve with a fresh, thick, crusty bread.
A delicious and quick meal/side dish/snack. Also tastes good inside of a pita with fresh hummus. Random, I know…but delicious.
